Hashbrown & Egg Casserole Easy Dinner/Brunch Recipe

Last Tuesday night, I attempted to make and write about this recipe. It is an easy egg casserole with protein and you have a balance of carbs, fat, and a few veggies for color and taste.
Since this was our easy dinner (this could be for brunch too don't get me wrong) last night, I would like to make this fresh by sharing this recipe with you my friend. And for it to be in my memory because I will read my blog from time to time. Adding a detail? A little help from my mother who took the taste test. She was hungry and about to go to bed but I told her to just wait a little bit longer. I don't want you to sleep hungry. She said the casserole was good. Every one of us got seconds.

I also made a Pineapple, Strawberry, and Banana that early afternoon, with Peach Yogurt Sorbet for dessert. All blended. With a little extra natural sweetener. We did not eat the sorbet because, by the time we finished eating our dinner, it was late. Can you guess what this natural sweetener is? Mind you, I attended a meeting conference so it was late after 9 PM I just started to rummage😓 the kitchen and cook for us.

Being inventive in the kitchen has its pros and I love it when there are few necessary ingredients to just grab and make all the while making it look appetizing to serve. But still not skimping on flavor. I love to work in the kitchen and I like to feed my family.
As the only daughter and the oldest sibling, I manage to find time to cook and help mom in the kitchen because if we just put weight on my mother for everything we will be collapsing as a family without foundation. I support her build all the while also for Dad. The role of the eldest daughter. It sticks to me and culturally has always been.
I help even if it is just in the kitchen because we all love our mother. I do this for her and my family. It is a responsibility that I take on not to be told to but just an instinctive way to love her and be her counterpart when she needs help. No doubt in a heartbeat, she would do the same for me.
