I am thinking of this recipe share for quiet awhile now. A back-to-back share of recipes I want to share for anyone who wants to try something new (if you haven't tried something like this). Plus easy, convenient tips on how to make dinner for one.
This is the first recipe I want to bring to the blog with this series. My favorite way to make dinner when on a time crunch.
Meaning the crunch is "hungriness". I am talking to all of you work from home readers who find my blog. LOL!
Or just because reason to make food like this either because of cravings, or the easy to follow steps without the fluff.
I must say if you want an easy way to meal prep (liempo) pork belly and have char broiled taste for dinner without the mess of bringing the grill and charcoal brisket to light a fire. I am pretty sure this is the closest in making this happen.

I must say it is kind of addicting, and you might bring out a cast-iron flat skillet and open the windows. The house will be fragrant like that of seared pork belly as if on a grill.

And I am not exaggerating.
This would be good if you marinated in bulk and freeze individual portions dinner for one. To be cooked whenever you would like. If it is not cut in strips, you can kindly ask the butcher for it to be cut bar-be-cue cut, and they will do it for you. If they offer this service from the grocery store.
What Should Be Paired?
I know! The question lingers.
Warm rice, soup, pickled veggies. And it would be good. And as from our culture (saw sawan) or dipping sauce. With tomatoes, onions. If you like it spicy-chili. Some even diced cucumbers.
Tocino Liempo:
*My style of prepping and making my take on the marinade. And serving calls dinner for one.
1 lb. Pork liempo strips.
Marinate mix:
1/2 Cup soy sauce
1/2 Cup white vinegar
2 Tbsp. sesame oil
2 Tbsp. minced garlic
1/2 tsp. salt
1/2 Tbsp. ground black pepper
1 tsp. paprika (for the color)
2 Tbsp. brown sugar
1 1/2 Cup lemon lime soda
Instructions:
Rinse the pork belly thoroughly through a colander. Drain. Cut the strip in half on the short side for bite-size pieces. Rinse and drain. Set aside.
In a medium bowl, mix soy sauce, vinegar, sesame oil. Add in garlic, salt, ground black pepper, paprika brown sugar.
Put the sliced pork strips in the bowl with the marinade mixture and mix until everything is drenched with the marinade.
Add in lemon lime soda. Mix again. Make everything coated.
Cover and put in refrigerator overnight or, if cooked all at once let it set in advance for 1-2 hours in the fridge.
Options to Prep in Portions
I know you are here for this information too. This is just how I have an idea on how to do it effortlessly. I grab a sandwich size zip-lock about 4 0r 5 of them and put my portions for whenever I need to defrost a bag before dinner for myself. Um, it is life saver for easy dinner prep. All I need to do is make the dipping sauce and 1 cup warm rice for this portion. Or also some extra pickled radish and soup on the side.
Let me know if you find this easy and very much affordable meal prep for one to have dinner even for a month. You know, staggering it throughout or just when you crave charbroiled (tocino liempo) pork belly and not in a fan to go to a bar-be-cue place at that point in time.
