What a nice way to make lunch!😀 I am not in a hurry or press for time. That is quite a feat. I had been thinking to make this recipe for sometime. I love how easy it is to get things done with this easy but tasty and minimal effort to whip this salad.

Why Chicken Tenderloin?


Ah, the short answer is already giving easy vibes. Just as it is, "tender" - loin.


*😍Just a thought: A chicken tenderloin is the smaller muscle attached to the underside of the chicken breast, often called the "chicken tenderloin breast" to emphasize its origin and tender quality. While both are boneless, skinless cuts with a similar flavor, the tenderloin is a separate, thinner, and more delicate muscle than the larger breast. 


It is easy to shred the chicken once it was out from the pot drained, cooled and then get to action. I only used traditional method. With two forks and shred away! It looks like the forks just butter through the shredding of the pieces of chicken tenderloins.


It is not drying and considering the chicken is out from the pot of broth. I am not in a hurry when I am shredding. For the reason the chicken wouldn't dry fast like preparing chicken breast. Per observation in the past. Usually I have a hard time even shredding it with the forks because the thickness of the chicken breast.


Just an observation, I do like this chicken salad prep better.

This, I will use for sandwiches.


I like this salad so much and it is tasty with all the flavors layered in with the added vegetables. Lettuce and sliced tomatoes in between your choice of carbs.







🥪 Chicken Tenderloin Salad Recipe Card


Prep Time: 15 minutes Cook Time: 15 minutes Total Time: 30 minutes Servings: 4


🌿 Ingredients


For boiling chicken:


  • 5 cups filtered water

  • 7 strips chicken tenderloins

  • 2 bay leaves

  • 1 tsp black pepper

  • 1 tsp sea salt

  • 1 tsp garlic powder


For salad mix:


  • Shredded cooked chicken

  • 1 tbsp finely minced garlic

  • 1 tsp sea salt

  • 1 tsp black pepper

  • ½ cup mayonnaise

  • 2 tbsp mustard

  • 1 tbsp lemon juice

  • 1 cup finely chopped walnuts

  • 1 cup craisins


🍴 Instructions


  1. In a pot, combine water, chicken, bay leaves, black pepper, sea salt, and garlic powder.

  2. Boil until chicken is fully cooked and opaque (10–15 minutes).

  3. Drain chicken in a colander, then let cool in a salad bowl. Shred into bite-sized pieces.

  4. Chop walnuts medium-fine, add to the bowl along with minced garlic, sea salt, black pepper, and craisins.

  5. Mix in mayonnaise, mustard, and lemon juice until well combined.

  6. Chill before serving for best flavor.
