Hehe! This makes me so happy and glad I made an attempt to this homemade recipe. It is just as the recipe entails.


But with much more.


I made this though with an intention as pastry bites with strawberries and cream cheese filling like the ones you get full servings at Yum-Yum donuts or any other well-known donut shop, bakery, pastry shop popular to where you live. I and my mother love these pastries.


She most likely so enjoy eating the blueberries and cream cheese. This time I want to attempt making this mini size.


Given, it was not purposely to be like the end result in the first place, a custard like pie and in between cobbler too. Uuuh... it just evolves into something more special. Since I made a mistake of wanting to make the strawberry cream pastry into a mini bite size hors d' oeuvre dessert. *Batting eyes* Even if there is no party event to go to. I was only trying. I am making this dessert for just because occasion.


My family and I loved how it turned out!


The homemade strawberries compote sweetened with organic dates, a tablespoonful of brown sugar, and cream cheese mixture is just the right consistency. It is the thickness of it is what gets me excited as I slice into it. It turned into a soft custard-like thickness. This is with the help of cornstarch mixed in to melted butter.



Just the way I intended it to be when I shifted to a different strategy making it work after I failed on the mini strawberries and cream pastry bites version.


But all in all, I might have found another go to from my experimental ventures in the kitchen.


And it is still under minimal sweet surveillance for the nutrition facts. As much as possible, I try to sweeten it with-can you guess again?


Organic dates as sweetener.


Added 2 tablespoons of brown sugar.


In this recipe you will never taste the tartness of the strawberries. As much as I can describe it, you can taste a mix of strawberry jam with cream cheese only with pie form. It is so delicious the sides of where the puff part baked golden brown has that buttery taste.


I used the mini cake baking pan by Wilton but covered the bottom and sides with tin foil before I put the sweet puff pastry dough.



How to Know If the Puff Pastry is Cooked Through?


Underneath needs to cook too so make it a little longer in the oven on a medium temperature and elongate the time to cook it just a tad bit.


What I would literally do is, cook it for the suggested temperature and for how long it should be there in the oven as the recipe suggested. Find out on the bottom of the article for in-depth baking steps and tips. I used the tabletop convection oven for this. Then add a lesser temperature to cook the bottom part of the pie. With a little extra time.


Just so you know for the fool proof version of the puff pastry dough I used the store-bought brand Jus Roll. Ready to be made without having too much time to make puff pastry sweet dough by hand. I just want to make this recipe as simple as possible without you having indecisive decision of, "I would like to do it, but never mind."

Ingredients

  • 1 sheet Jus-Rol Puff Pastry, thawed

  • 2 cups frozen strawberries (half-thawed)

  • 4–5 pitted dates, finely sliced

  • 2 tbsp brown sugar

  • ½ block cream cheese (about 4 oz)

  • 1 tsp cornstarch

  • 1/4 stick butter (for cornstarch mix) 

  • 1 tbsp melted butter (for brushing pastry edges)

  • Cool Whip, for garnish (optional)


Instructions

  1. Make the Strawberry Cream Filling In a saucepan over medium heat, add the half-thawed strawberries. Gently mash with a meat masher. Add the finely sliced pitted dates and continue mashing.

  2. Thicken the Mixture In a small cup, mix 1 tsp cornstarch with ¼ stick melted butter. Add this to the saucepan and stir to combine. It will gently thicken the fruit mixture. Then, stir in brown sugar until melted, followed by the cream cheese. Mix until creamy and smooth. Remove from heat and let it cool slightly.

  3. Prepare and Bake the Pastry Base Preheat oven to 350°F (175°C). Unroll the Jus-Rol puff pastry on a parchment-lined tray. Lightly score a ½-inch border around the edges and prick the center with a fork to prevent puffing. 🧈 Brush edges with 1 tbsp melted butter for a golden, crispy finish.

  4. Bake the Pastry Bake for 20 minutes at 350°F. Then reduce the oven to 200°F and bake for 3-4 minutes more to ensure the bottom is crisp without overbaking the top. Watch closely, especially if using a tabletop convection oven.

  5. Assemble the Pie Spread the strawberry cream filling over the cooled pastry. Slice into 4 mini servings and top with a Cool Whip dollop if desired.


💡 Baking Tips
